What I Eat in a Day Vegan #1

I’m back in Oxford so what I eat has changed up a bit because of what I can afford to buy and what is avaiable, as well as having less time to cook. So here it is, what I eat in a day:

Breakfast:

Spinach and mango nicecream. I go through phases with nicecream mostly because sometimes I do not have the patience to wait for my blender to handle all of the frozen fruit. Having said that when I do make it I love to get my greens in as its a great way to make the most boring green taste great because of the sweetness of the fruit. Because it’s winter here in the UK I have been relying alot on the frozen fruit availble in my local supermarkets, I was lucky enough to find a bag of frozen mango and of course I topped it with all the toppings.

Lunch:

I didn’t really have lunch today I just snacked on a banana and a cliff bar…

 

Dinner:

Red Thai Vegetable Curry. Being totatlly honest I just mixed in some pre-made curry paste from the shop and some coconut milk with whatever vegetables I had in the fridge, some cashews and peanuts, and some tofu which I fried off in a spereate pan before mixing it in. I served it with about 1/2 cup of white rice which my housemate and I buy in bulk from the local asian supermarket.
