After a week or so without wifi etc I am back with a new post and it is a nice and simple ‘What I Eat in a Day’ so I am going to go straight into the post.
I normally start my days with oats because despite it being summer Wellington is very windy so my house is quite chilly early in the morning which makes me crave warming filling foods. I make my oats with almond milk, and my usual toppings are chia seeds, shredded coconut, chocolate hazelnut spread (aka vegan nutella), sunflower seeds, and coconut yogurt. I’ve been using the Cathedral Cove Naturals yogurt since I’ve been here and it is so creamy, and only has two ingredients which I love.
Salad, I have been mostly eating salads for lunch because I’m not always that hungry but need something to tide me over to dinner. I start with a base of mixed greens, and then top it with a mix of veggies, seeds, tempeh, croutons and then some balsamic dressing.
Anything with rice and salad. It was stir-fry with teriyaki sauce yesterday, served with half a plate of greens with a little dressing and about 1/2 of cook rice. I have also been loving bean chilli, and potato curries to go with this.
I also eat half of one small dark chocolate bar a day and some fruit to satisfy my sweet cravings especially at work where I serve plenty of sweet treats from the bakery.
